Lunch Time - Who has Sandwich Envy with this...

Egg Salad Swiss Chard'wich 

Swiss Chard is beautiful, full of great nourishment and sturdy enough to work as a pseudo bun for any gluten free needs. I chose to make this lunch with Egg Salad, but you can fill with Chicken Salad, Tuna Salad or your favorite Sandwich filling. We are fortunate enough to have a friendship with an Organic Chicken Farmer, so we always have an abundance of farm fresh eggs on hand. Here is my basic recipe. 

This recipe also makes excellent deviled eggs! 

Basic Egg Salad Recipe Serves 2 

5 Hard Cooked Eggs 
2 tablespoons Mayo 
1/2 teaspoon Grainy mustard 
1 tablespoon Apple Cider Vinegar - Bragg Live Foods Apple Cider Vinegar is my favorite!! 
2 Green Onion - Chopped finely 
1/4 Cup Flat Leaf Parsley - coarsely chopped 
Salt and Pepper to taste
Spanish Paprika to Garnish 
 4 stalks of Swiss Chard, Washed and Dried 

 Crush peeled, hard cooked eggs with fork. Carefully mix in the Mayo, Mustard, Apple Cider Vinegar and salt and pepper until incorporated. Carefully incorporate the Onions and Parsley. Hold the Swiss Chard Leaf in hand like a boat and fill with 1/4 of the mixture, fill remaining leaves. This holds up great in a lunch box. If you do not have refrigeration simply add a frozen juice box to the lunch bag to keep things cold. Enjoy!
