Jalapeno Poppers!

Football time is here again! 
Finger foods, appetizers, hors d'oeuvers, little foods - whatever you call them- I love it! I love these fancy little snack foods. I have been on the search for a Jalapeno Popper that is Gluten Free and full of taste. I think this may be my favorite recipe. My husband and I made these for dinner and they are amazing. These spicy little poppers will be an excellent addition to your game day menu or any meal time event!

 makes 10 poppers 

5 fresh Jalapeno's - Cut in half lengthwise, seeded and deveined. (the seeds are what makes the pepper extra hot - be careful, some people like to wear gloves. Be careful not to touch your eyes!) 
1/2 Cup cream cheese - softened 
3 tablespoons Parmesan Cheese 
1 tablespoon lime juice 
1/2 tsp ground cumin
Half ripe Avacado - Sliced into 10 thin slices 
5-7 Prosciutto Slices 

Pre-heat oven to 400. Line a baking dish with parchment paper. Arrange the Jalapeno halves like boats on the parched lined dish. 
In separate bowl mix Cream Cheese, Parmesan, Lime Juice and Cumin. 
Use a spoon to fill each Pepper with this Cream Cheese mixture. 
Top with a Sliced Avocado. 
Wrap with Prosciutto. 
 Bake 20 Minutes. 
Enjoy!

Increase the recipe to make the desired amount of poppers. Please use fresh Jalapenos for the best results. A Jalapeno with smooth skin will be more mild than a Jalapeno with many striations, or ridges.
