Pizza Rolls and Dorot Frozen Herbs

Monday Night was our night to use up the random things in the house. We opted for pizza rolls! They were easy to make and so yummy. I put some in the freezer for a quick snack or dinner addition in the future. You can make your pizza rolls with any fillings you'd like. We also utilized the Dorot Frozen Herbs. I must say that I absolutely love this product and was ecstatic to find a variety pack at Costco! Needless to say I am going wild with my frozen herbs. My freezer is full of these fun little packages. Between shopping at the Linden Hills Coop and Costco I have every herb they make.

These are simple and easy treats. Enjoy!

1 Bag Bob's Red Mill GF Pizza Crust (Prepare per bag directions)
1 Jar Pizza Sauce
2 Cups Shredded Cheese
1 Cup Ham Cubes ( or any fillings you
enjoy)
1/4 Cup Extra Virgin Olive Oil
2 Dorot Garlic Cubes
2 Dorot Basil Cubes

1.) Prepare pizza crust to bag recipe. Divide into 3 sections. Wet a kitchen hand towel and lay flat on countertop or flat surface, place parchment paper over the towel - the wet towel keeps the parchment from moving while you roll our your dough. Using gluten fre
e all purpose flour, generously flour your surface and roll out one section of dough.

2.) Combine the Olive Oil and 4 Dorot Cubes and stir until fully combined. Using a pastry brush lightly brush the dough.





















3.) Arrange your toppings. If using
sauce, add the sauce before the cheese. Leaving one area free of toppings to seal closed.

4.) Gently Roll into a long tube shape. Slice into 2 inch rounds and place in a muffin tin. Adjust size of rolls to fit your muffin tin.




















5.) Brush Tops with Olive oil and Dorot Mixture.
6.) Bake at 400F for 20-25 minutes until tops become golden brown.

Jalapeno Poppers!

Football time is here again! 
Finger foods, appetizers, hors d'oeuvers, little foods - whatever you call them- I love it! I love these fancy little snack foods. I have been on the search for a Jalapeno Popper that is Gluten Free and full of taste. I think this may be my favorite recipe. My husband and I made these for dinner and they are amazing. These spicy little poppers will be an excellent addition to your game day menu or any meal time event!

 makes 10 poppers 

5 fresh Jalapeno's - Cut in half lengthwise, seeded and deveined. (the seeds are what makes the pepper extra hot - be careful, some people like to wear gloves. Be careful not to touch your eyes!) 
1/2 Cup cream cheese - softened 
3 tablespoons Parmesan Cheese 
1 tablespoon lime juice 
1/2 tsp ground cumin
Half ripe Avacado - Sliced into 10 thin slices 
5-7 Prosciutto Slices 

Pre-heat oven to 400. Line a baking dish with parchment paper. Arrange the Jalapeno halves like boats on the parched lined dish. 
In separate bowl mix Cream Cheese, Parmesan, Lime Juice and Cumin. 
Use a spoon to fill each Pepper with this Cream Cheese mixture. 
Top with a Sliced Avocado. 
Wrap with Prosciutto. 
 Bake 20 Minutes. 
Enjoy!

Increase the recipe to make the desired amount of poppers. Please use fresh Jalapenos for the best results. A Jalapeno with smooth skin will be more mild than a Jalapeno with many striations, or ridges.

Raw French Fries


These yummy little morsels are a great addition to any meal. We enjoy eating raw foods for the extra enzymes. These fries will be enjoyed by the most picky eater - try these at your next event!

1 Large Jicama or 3 Kohlrabi (peeled and cut into fry shapes)
1/2 cup Extra Virgin Cold Pressed Olive Oil
1/2 teaspoon plus 1/2 teaspoon Sea Salt
1/2 Teaspoon Turmeric
Large Zip Lock Bag

Place the Jicama or Kohlrabi fries, Oil, 1/2 teaspoon Sea Salt and 1/2 Teaspoon Turmeric in bag and gently shake. Refrigerate for 4-6 hours, periodically shaking the bag so all pieces are coated thoroughly.

Drain the oil and gently pat dry with paper towel. Arrange in a basket lined with parchment paper and garnish with salt if desired. Serve with plain or with ketchup
